agree  writeaway: yes and no.(don't want to say neutra). it's not creaming the rice but it gives the rice a creamy texture. It seems to be a problem term to translate exactly so a lot of texts use the Italian and explain it, it would seem.

Curiosità - una parola: "mantecare"

Sul perché si dica mantecare, ci sono molte versioni. La più verosimile fa riferimento alla fabbricazione del burro. Come il burro, che secondo il sistema tradizionale si otteneva sbattendo la panna in un recipiente cilindrico verticale (la zangola), tenuto al fresco, fino a quando si rassodava, anche il gelato si otteneva tanti anni fa sbattendo la miscela in un recipiente cilindrico verticale, immerso in ghiaccio e sale. Il burro, in spagnolo, si chiama manteca e resta da vedere come mai si sia usata una parola spagnola per un prodotto così italiano.
Ci è forse arrivata dalla Spagna, dove pure hanno una antica tradizione gelatiera ereditata, anche lì, dagli Arabi, come in Sicilia, o forse il vocabolo è arrivato ai nostri gelatieri, del meridione o del lombardo veneto, attraverso la dominazione Spagnola?
mantecatori verticali sono quelli con i quali è nato il moderno gelatiere artigiano, finalmente affrancato dal problema del ghiaccio e sale, e della necessità di spatolare di continuo via dalle pareti del vaso la miscela che gelando, si trasforma in gelato. Nel primo mantecatore verticale, brevettato nel 1927 dal bolognese Otello Cattabriga, un coltello che si muove verticalmente lungo la parete interna del vaso di mantecazione, riproduce l’azione di “stacca e spalma” fino a quel momento eseguita dal gelatiere, a mano, con una lunga spatola di legno.
