I would translate "prestazionalità" as "supply of services" but I'm not sure since the meaning in Italian is not very clear to me!

I am not sure of what the best ENG formula may be but literally it is *performability* and it's a new-born term (never heard it until last year or so and now it's all around!)

The root is prestazione (performance, among others) and the very word gives an idea of "ability to perform at a high level", or *performability*

As far as diffuso/capillare (capillare being a hypernym), it conveys a meaning of *pervasive* or *permeating* (the hotel's staff at every level).

It depends on the context.

Prestazionalità can be referred both to "services" and to "performance".

E.g. the services of a doctor (prestazioni di un dottore).
the performance of an engine (prestazioni di un motore).

You are speaking about a hotel, so I think it's better to use "services". (a wide supply of services). But, if "prestazionalità" is related to a specific item or object offered by the hotel, you must pay attention to the difference in meaning of "service" and "performance".
