** It is a staple of Italian households, named after its shape: half (mezza) moon (luna). **
This specialty cutting instrument is very handy for chopping, especially the small stuff, like onions, parsley, etc. Used on a cutting board or in a wooden bowl, it emulates the rocking motion of a chef knife.
It sometimes takes a little practice to coordinate a good rocking motion.

Mezzaluna
Country of Origin: Italy
Region: Tuscany
The Saladini mezzaluna (translates to half-moon) might take a bit of getting used to. It is perhaps the most striking utensil in our kitchen, and it was perhaps a bit intimidating when we first started using it. However, very soon after putting it to use and mastering our mincing technique, we found that this beautiful knife is just as much a well-designed tool as it is an art piece. The perfect tool for mincing garlic, herbs and vegetables. The handle is made of beautiful Italian ox horn.
While dining in Verona at 12 Apostoli, we fell in love with the tableware and had to track it down. It turned out to be hand made by the craftsmen of the Saladini family in Scarperia just north of Florence. Scarperia is an ancient medieval village built by the Florentine Republic in the 14th century. It is known as "the town of knives" and justifiably so, as the art of manufacturing fine knives has been ongoing since the village was first settled. Their knives use the highest quality stainless steel and natural materials such as ox horn, water buffalo horn and Tuscan olive wood for their handles.

Mezzaluna (cucina)
versione INGLESE:
http://en.wikipedia.org/wiki/Mezzaluna
A mezzaluna is a knife consisting of a single or double curved blade with a handle on each end. It is often used for chopping herbs or very large single blade versions are sometimes used for pizza or pesto.
Mezzaluna means "half moon" in Italian, after the curved shape of the blade, and is the most common name used in the UK. Other names used include herb chopper or hachoir, which is its French name.
http://en.wikipedia.org/wiki/Herb_chopper
An herb chopper is a cooking tool specifically designed for chopping fresh herbs. There are a variety of different designs and styles for herb choppers. Some include a series of blades to finely slice the herbs. Others are compact food processors. A mezzaluna paired with a concave cutting board may be marketed as an herb chopper.

Dario Natale

Discussion

VEDERE DA PAGINA 15 in poi..FOTO + USO
http://www.toscalberghi.it/coltelli-global/
esempio = pollo, coniglio, tacchino, agnello...
http://www.larousse.com/it/dizionari/italiano-francese/macin...
macinare = hacher
cioè tritare, sminuzzare, tagliare a briciole
(lama alta)
http://www.larousse.com/it/dizionari/italiano-francese/sminu...
sminuzzare =
Esempio : verdure, erbette, cipolle, spezie....
http://www.youtube.com/watch?v=uq9r9rJR2vo
Mezzaluna = http://www.google.com/imgres?hl=it&client=gmail&sa=X&rls=gm&...
http://www.officinacoltelli.it/coltello-trinciante-p01.html
http://fr.jocca.es/Producto.aspx?IdProducto=10655
