Spindles seems the best fit I can come up with for spool/reel/bobbin mounts. A search for "adjustable spool stand spindles" gives many examples of such.
For "Gruppo di apertura e chiusura *spalle*" I might use something like "Adjustable stand set" - or however you might have translated "gruppo".

Interesting on the use of 'bracket'. 'Support bracket' might fit as well, or some variant.
For "Gruppo di apertura e chiusura *spalle*" I might use something like "Adjustable stand set" - or however you might have translated "gruppo".
