Coste (sometimes even "costine") it's a regional (mostly in Northern Italy) way of calling the whole vegetable (leaves and stalks). Waiting to be invited over, then! :-)

scusate tutti, non vorrei fare l'antipatica, ma le coste non sono solo la bietola, per esempio ci sono le coste di sedano da fare ripiene, dipende dalla verdura (in genere si parla di verdure tipo sedano che hanno il gambo duro)
