- те несколько месяцев каждое лето, которые курсанты проводят в море, на УПС, начиная с 3-го курса.

Учебно-технологическая практика - это практическая работа по сборке-разборке-обслуживанию механизмов, часто в учебном центре.
Думаю, подойдёт "maintenance training" или, более полный вариант,
"workshop and practical maintenance training"

Разницы между плавпрактикой и "производственной плавательной практикой", честно говоря, не знаю, хоть и закончил эту систему :) По-моему, это то же самое, только более официально.

P.S. Я бы избегал слов sail training, поскольку в курсантской терминологии это может означать конкретно парусные суда

Возможно, под "производственной плавпрактикой" подразумевается практика на "реальных" судах, в отличие от учебных. Такое тоже распространено. В этом случае, я бы назвал её "training voyage on a commercial vessel"
И, в качестве уточнения, УПС = "Commercial training ship/vessel"

neutral  Dmitry Kozlov: Это не вполне соответствуют контексту: в нашем случае речь не идет о "training of students as sailors", и "sail training" - тоже не совсем то. Ваша ссылка относится к парусным судам, а не к учебно-производственным.
