Introduction
“Luxury must be comfortable, otherwise it is not luxury”. Her own words sum up the brand that has become one of the most popular in the world. With the idea that women’s fashion should be comfortable Chanel transformed the fashion industry and revolutionised women’s clothing. The designer behind the brand associated with upscale fashion, the little black dress and the iconic Chanel No. 5 perfume came from humble beginnings.
Early life.
Born August 19th 1883, in Saumur France, she was given the name Gabrielle Bonheur Chanel at birth. Chanel often claimed that she was born in 1893 to appear younger, and stating that she was actually born in Auvergne in an effort to make her upbringing appear more glamorous.
The truth is that her childhood was an underprivileged one. Born to an unwed mother, Eugénie Jeanne Devolle, who worked as a laundrywomen in a workhouse and a father that worked as a peddler, life wasn’t easy for the family. Two parents and five children were living in cramped, run down lodgings. Illness was prevalent and when Chanel was only 12 her mother passed away from bronchitis, leaving her father, Albert Chanel with five young children. Following this misfortune Albert quickly farmed out the children and Chanel and her sister were sent to live at the convent of Aubazine.
The cruel twist of fate that bound Chanel to spend the rest of her teenage years in a convent was to shape the rest of her life and success. It was in the convent that the nuns taught Chanel how to sew.
School holidays were spent with relatives in the provincial capital of Moulins. Here Chanel was able to sew with more flourish as she wasn’t under the strict rule of the convent.
At the age of 18, Chanel’s time at the convent ended. She left and worked two jobs, one as a seamstress and the other as a singer at a cabaret bar that was frequented by cavalry officers. Her youth, good looks and charm made quite an impression on the clientele, and it was here that she met Etienne Balsan, a wealthy French military officer – first in a string of high profile affairs. During her brief few years as a singer, 1905-1908, she was given the nickname “Coco” an abbreviation of the word cocotte, a French word meaning kept women. During this time Chanel did try to pursue signing professionally but soon realised that a stage career was not for her as her success in local cabernets was attributed to reasons other than her singing voice. Her voice failed to impress when she auditioned in prominent theatres, cafes and concert halls and so she decided to discontinue her efforts.
Relationships – Balsan and Capel.
At the age of 23 Chanel became Balsan’s mistress. She moved into his chateau near Compiègne, a very beautiful and desirable area, where she lived for the next three years living a life of luxury. He spoiled her with gifts of expensive dresses and jewellery while they socialised with other wealthy like-minded people. During this time she mixed in influential social circles and built connections that would lead to important opportunities later on. Also it was in Balsan’s chateau that she started to design hats. It was just for enjoyment at the time but would later turn into a business venture.
In 1908, never short of male admirers, Chanel began an affair with one of Balsan’s friends, Captain Arthur Edward ‘Boy’ Capel, a wealthy English Industrialist. Chanel moved out of Balsan’s residence and Capel set her up in an apartment in Paris.
Like Balsan, Capel treated her to the finest things in life. It is said that Chanel had hoped to settle down with this man but he was never faithful to her. In 1918 Capel married an English aristocrat, Lady Diana Wyndham. This was very hard for Chanel to deal with but the two didn’t stop seeing each other and continued the affair even after Capel’s wedding.
The beginning of an Empire.
In 1910, recognising Chanel’s creative talent Capel financed her first shop. At 21 rue Cambon in Paris, Chanel designed, created and sold hats in her shop named “Chanel Modes”. Her designs were noticed and became popular with French actresses of the time. Growing her recognition and building a reputation for classic design, Chanel’s millinery business boomed.
Success didn’t stop there. In 1913, again with financing from Capel she opened her first boutique in a prime location in the centre of Deauville. Her clothes were a shift from the physically restrictive fashion of the era, which usually involved corsets and full length skirts, which are impractical for most activities. Her vision for fashion was one of comfort, practicality and simplicity. She had the opinion that designers had forgotten that women are inside the dresses they create, and thought that fashion should have a more natural shape. Her designs were menswear inspired, suitable for leisure and sport, introducing trousers and suits for women. Coco Chanel used jersey cloth because of its physical properties – it was comfortable and draped well over the body. These jersey garments proved to be revolutionary, changing the relationship between woman and their bodies. It is said that Capel’s sartorial style is what inspired many of Chanel’s fashion concepts.
Like her millinery business, her clothes swiftly got recognition. It seemed to come easy for Chanel, her confidence and bold attitude coupled with talent and her aptitude for design lead to her business to thrive.
Expansion.
With determination to grow her success even further, Chanel opened a second boutique in 1915 in Biarritz, a location chosen probably because of its close proximity to wealthy Spanish population. A wise choice of location as within one year of business, Chanel was able to reimburse Capel for his original investment.
It wasn’t all work in Biarritz, as it was here she came across an expatriate aristocrat, the Grand Duke Dmitri Pavlovich of Russia. The two began a romantic relationship that continued on for a number of years.
Couture.
As a result of the phenomenal success she found with her clothes, in 1918 Chanel, as a registered couturiere, established her couture house at 31 rue Cambon, one of the most fashionable districts of Paris. Here she sold day-wear creations, simply designed dress-and-coat outfits and elegant black evening dresses, hats, accessories and later expanding to jewellery and fragrance.
Chanel suffered a huge blow in 1919 when Arthur Capel was killed in a car accident. Losing someone she had been with for nearly ten years as well as the person that financed and supported her first business venture a defining moment in Chanel’s life, herself stating that “His death was a terrible blow to me. In losing Capel, I lost everything. What followed was not a life of happiness I have to say”.
Chanel No. 5.
Chanel’s signature perfume, Chanel No. 5 proved just as successful as her clothes and was noticed by some very wealthy business owners. In 1924 Chanel made an agreement with two brothers, Pierre and Paul Wertheimer, who were the directors of perfume and cosmetic house Bourgeois. A separate corporate entity was created, and the Wertheimers agreed to provide full financing for production, marketing and distribution of the perfume. In this agreement Chanel received 10% of the profits and had no further involvement with the business, an agreement that Chanel greatly regretted and fought a losing battle for 20 years over it.
World War Two.
At the start of World War Two Chanel closed her shops giving the reason that war was not a time for fashion leaving only jewellery and perfume for sale. 3,000 workers were devastated to have lost their jobs.
During the German occupation of Paris, Chanel was linked romantically with a German officer named Hans Gunther von Dincklage, which damaged her reputation in her home country. She lived with him in a luxury apartment in the Ritz Hotel Paris for the duration of the war.
Post World War Two.
At the end of WWII, with a 15 year absence, Chanel thought it was the right time to renter the fashion industry and in 1954 her grand couture house was re-established. The end of the war Europe saw a prominence of male designers, including Christian Dior. Chanel was not a fan of their designs and was convinced that women would rebel against the “illogical” design that their collections encompassed with cinched in waists, a padded bust, heavy skirts and stiffened jackets.
Despite this opinion being the reason that Chanel’s designs were so popular prior to the war, Parisians did not receive her new collection well. However across the waters in Britain and America, her return to fashion was welcomed and she enjoyed success with these markets for the rest of her days.
The death of Coco Chanel.
Chanel although tired and ailing didn’t stop working. She was busy preparing the spring catalogue for the year of 1971 when she began to feel ill. She went to bed early and on Sunday morning, January 10th Chanel passed away in her home in the Ritz, where she had remained for over 30 years. Her funeral was held at the Église de la Madeleine. Her funeral was as style focused as she was as the front row of seats at the ceremony was occupied by her fashion models and her coffin was decorated with a selection of white flowers with a few red roses.
Conclusion
Chanel, being one of the most recognisable names in fashion still to this day, redefined the fashionable woman of her time. Revolting against the overly feminine, uncomfortable designs that women had lived in for so long, she introduced simplicity and coupled style with casual wear. She prided herself on her creativity and her awareness of what women wanted.

Brown Chicken Stock
Ingredients: water, chicken bones, onions, carrots, celery, tomato paste, red wine parsley, peppercorns, bay leaf, thyme, garlic. Bones are roasted, vegetables are caramelized and all ingredients are simmered (added at different times for best flavor extraction). – Great for use in darker soups, sauces and braises, works great in to take the place of broths (hardiness will hold up to take the place of beef broth also) in recipes.
Brown Veal Stock
Ingredients: water, veal bones, onions, carrots, celery, tomato paste, red wine parsley, peppercorns, bay leaf, thyme, garlic. Bones are roasted, vegetables are caramelized and all ingredients are simmered (added at different times for best flavor extraction). Veal stock is revered for its thickness because of the concentration of gelatin in veal bones – Great for use in darker soups, sauces and braises, works great in to take the place of broths in recipes.

UNIT 1
To know the foods as nature presents them to us and to know what they provide us with.
1) GENERAL OBJECTIVE:
To know the food groups that exist and the variety within each group, analysing them from different perspectives. We will only study them to know where they come from, try to understand why they are the way they are and what they provide us with. Also, as much as possible, we will avoid talking about nutrients.
2) LEARNING OUTCOMES:
1) To identify foods according to their origin:
a. Animal
b. Plant
c. Mineral
Also, to know the nutritional characteristics of each group.
2) To distinguish food groups: starchy foods, fruits and vegetables, meat, fish and eggs, legumes, nuts, fats, sugars and water. Also to know how to classify each food.
3) To classify foods according to their characteristics in terms of nutrients:
a. The body-builders
b. The energy-producers
c. The body-regulators
4) To recognize which foods we should be eating daily, weekly or occasionally.
5) To understand that a sustainable diet is always a healthy diet and vice versa. Both sustainable and healthy respect the seasonality of food and the consumption of local products.
3) THEORETICAL CONTENTS
THE ORIGIN OF FOOD:
Most of the food we eat comes from NATURE.
We can get food from animals, vegetables, fruits or the plants that the land provides us with, as well as minerals.
Depending on where we obtained them from, we classified them into:
• ANIMAL ORIGIN: because they are foods that come from animals (meat, fish, eggs, milk...).
• PLANT ORIGIN: because they are obtained from plants, vegetables and fruits that the land provides us with (fruits, vegetables, legumes, cereals...).
• MINERAL ORIGIN: because they are obtained from water and minerals (salt and water).
Therefore, foods are:
ANIMALS PLANTS MINERALS
Meat, fish, seafood, milk, egg, butter, honey... Fruit, vegetables, legumes, cereals, nuts, oil ... Salt and water
FOOD GROUPS:
Another common way of classifying foods is by food groups.
In the previous section, we learnt that there is a wide variety of foods that come from animals, plants (or soil) and minerals.
Now we will learn that these foods can be classified into 6 groups, according to their functions in the human body.
To do this, we will use a wheel, where it is very important to look at the colours, because the food groups that are the same colour have a similar function.
THE FUNCTION OF FOOD
And finally, another way of classifying food is by their main functions in the body.
Our body uses, transforms and incorporates several substances from food.
We can divide food into 3 groups depending on the functions they perform in our body. They are:
1) The body-builders, we call them this because they are foods that provide us with the necessary material for the construction of our muscles and tissues, as well as material to renew and repair them. They are like the construction workers of our body. For example: protein like meat fish, egg, milk, etc.
2) The body-regulators, these are the ones that organize everything inside us, that is to say, the functioning of our complex body. They are like the policemen who regulate traffic. Fruits and vegetables are body-regulating foods.
3) The energy-producers, these are the ones that provide us with the most energy (calories) for our body to work. They are like gasoline for a car or electricity for a machine. For example: starchy foods like bread, pasta, potatoes, fats, etc.
In the Food Wheel they are grouped by colour in 3 different parts (page4).
All foods are necessary.
It is important that we learn to eat everything (as long as it is healthy) and learns to eat only the amount needed for our body

The foods that we can eat EVERY DAY are the ones shown in the Food Wheel, because they provide us with all the necessary substances for our body to function.
But we always have to control the amount we eat. The foods that we can eat everyday are:
• Rice, pasta, potatoes or bread.
• Legumes and nuts.
• Fresh fruit.
• Vegetables.
• Meat, fish or egg.
• Milk, yogurt or cheese.
• Oil or butter.
• Water, tea or coffee.
The foods we should not eat every day and that do NOT appear on the Wheel of Food, since they are not necessary for the functioning of our body and can even damage it, are:
• Sausages and cold cuts.
• Cured cheeses and pates
• Salty snacks (chips, Doritos, etc.)
• Sweets.
• Sweet pastries.
• Sugary sodas.
• Alcohol.
Salt consumed in excess is not healthy, and may hinder the correct functioning of our heart and kidneys.
Eating and drinking too much sugar damages our body and cause weight gain.
The fat that we eat and do not need stays circulating in the blood hindering the function of the heart.
COFFEE AND ALCOHOL. DAILY, SOMETIMES OR NEVER?
COFFEE
• It does not provide our body with any important substances, that is why it is not on the Food Wheel we studied.
• It has a specific function that is to help us to STAY FOCUSED and have a MORE ACTIVE MIND.
• You can take one daily if you feel well after having it.
• Do not have it at night because it will not let you sleep and rest the mind.
ALCOHOL
• It is an energetic substance but provides us with "bad" calories.
• It is not good for our health
• It causes damage to our mental activity, liver, stomach and other organs.
• The less alcohol the better for our health.
• You should never drink alcohol if you are taking medication.
• It is not good to drink wine and beer every day. We can have it occasionally (and have only one glass). Occasionally and no more than one glass.
Habits like smoking and drinking alcohol have been studied very little in people with intellectual disabilities, although it has been observed that consumption is less frequent than in the general population. However, the advice is the same for all adults.
WHAT ARE THE LOCAL FOODS AND WHAT ARE THE SEASONAL FOODS?
The FOODS FROM OUR HOMELAND are those that are typical in the area and the region we live in. They are also known as LOCAL FOODS.
They are usually used as the main ingredient in local dishes and recipes.
SEASONAL FOODS are those that are grown and harvested in different seasons: spring, summer, autumn or winter.
When we eat foods during their corresponding seasons, they are cheaper and tastier.
In addition:
If we cultivate seasonal foods and eat local foods, we are taking care of the environment.
The environment is the space in which we live, that is to say, soil, land, air, sea, rivers, etc.

In order to learn about the foods, it can be very helpful to have a sample of each in the classroom. Therefore, a few days before we will ask the students to bring empty food containers. In the case of fresh food, we will ask them to bring cut-outs from magazines or printed pictures from their own computers.
Depending on the number of students, we will distribute the pictures, cut-outs or containers that must be brought by each of them.
Specifically, we need:

The healthiest diet is also the more sustainable.
Everything involving handling, processing, packaging or transportation of food impairs their nutritional proprieties, therefore, if we have the opportunity to consume fresh, seasonal and local products, they should be chosen as the healthier choice, not only for humans but also for the planet, that is to say, the environment.
WORKSHOP STEP BY STEP
A very important aspect of a sustainable diet is the seasonal foods.
There are not only seasonal fruits and vegetables; fish and shellfish also have their “preferred” months.
We can project the seasonal calendar or write it on the board. In ATTACHMENTS we have included the Spanish ones but each country should bring their own.
We will divide the students into four groups, one for each season, to put food on the station corresponding to them.
B.2) FOOD GROUPS WITH THE SUPERMARKET GAME

CONTENT
Foods are grouped into 6 groups (such as the Wheel of food) plus water:

SUPERMARKET
We will review the food groups at the same time as we make posters (with the paper and the markers) with the names of the food groups.
We will divide the tables in the classroom into 6 groups and we will leave a poster on each group, plus some space for water.
We select half of the students in the class and ask them to take out all the food from the boxes and organize them in the posters, like a supermarket.
Probably, the main difficulty will be to place the mixed foods in the posters, such as canned juices (are they fruits? or drinks? Do they go with the water?) or pre-cooked dishes (pizza vegetable, half bread, half vegetables), etc.
We will leave all these dubious food aside, to talk about them at the end.
They will also realize that there are foods that are natural but they are not in the Wheel of food because they do not provide us with nutrients themselves, but if we consume them they have functions in our body, such as coffee, tea, salt, etc.
Also, they will find foods that are not recommended for consumption, such as alcohol or sweets and we leave them aside for the end as well.
We will ask the students to do a presentation of their supermarket, explaining in which posters they placed the foods and why.
It is a good moment to explain to them an idea about the food groups, the fact that we probably eat all of them every day, but not in the same quantities. For example, we can drink two glasses of milk per day but when it comes to oil, we try to use only a teaspoon.
Mixed foods that we left aside are manufactured in factories and usually less healthy products, because they are less natural and they have more sugar, more salt and more fat than when we prepare them ourselves.
Now is when the first group of students sits down and we start working with the second group.
First we will ask them to review the “supermarket” posters and correct what they think is not well grouped. Then, they will explain their decisions about it (whether they changed foods from the posters or not).
Then ask them to, within each food group, also separate food types, ie:
• In protein, they should separate meat, fish, eggs, seafood, nuts and vegetables
• In dairy products, they should separate yogurt, milk and cheese.
• In fats, they should separate oils, butter and margarine.
• In starchy foods, they should separate pasta, bread, rice and cereals.
• In fruits and vegetables they do not need to separate anything.
• Once again, they will realize that there are very different foods, such as meat and fish, but at the same time, they are both similar because they are foods with protein.
When explaining dairy, it can be mentioned that yoghurts and cheeses come from milk. In this process, the milk loses water and gains fat (more in cheese than in yogurt).
Finally, we put “the supermarket” food away and everybody sits to discuss the conclusions. They should say these final reflexions or conclusions, we will help them with the questions below.
CONCLUSIONS
• Which foods from the supermarket are NOT NECESSARY for a healthy diet? (Superfluous food: candy, snacks, pastries, cookies, soft drinks...). They should be able to identify them.
• What is the difference between SUPERMARKET AND MARKET? (Manufactured & Natural. With & without packaging containers. With additives & without additives. Etc.)
C. OUTDOOR ACTIVITIES:
C.1) TO VISIT A WHOLESALE FOOD MARKET
This activity should be undertaken by the family or the teacher of the center.
MATERIAL: Notepad and pen (each student).
NUMBER STUDENTS: 10-12 people (if they go with the teacher).
APPROXIMATE DURATION: a whole morning or afternoon.
ACTIVITY STEP BY STEP:
• Identify the food groups available on the market (meats, fish, fruits and vegetables...) and write them down.
• Point out which ones we usually buy packaged and which ones we normally buy fresh or ready to buy in bulk.
• Within each food group, identify the variety of foods that are available, for example:
o Group: Meat
o Varieties: pork, chicken, rabbit, veal, etc.
• Ask the shopkeepers about the origin of their products and how can we obtain them:
o Where can we buy them
o How do they bring them
o How do they clean or prepare them
o How much of it do they sell
• They can write some notes down or even take pictures, since they need to collect all this information in order to keep it for another day in class, where they can explain what they have seen, developing each of the 4 points above.
C.2) TO VISIT A SUPERMARKET

We will make three posters (made of cardboard) in the classroom with the students:
• One yellow that says "energy-producers".
• Another red that says "body-builders".
• And another green that says "body-regulators".

Identify the groups of food that are available in every supermarket shelf.
We will focus on the shelf’s with foods that we want to promote, instead of focusing on all of them (we will not focus on the shelf’s that have non-recommended foods).
Now they will have a walk around the supermarket in order to indicate, depending on the primary function of the food, if the shelf should have a poster in red, yellow or green.
CONCLUSIONS:
• Could we only eat body-regulators food? Could we only eat energy-producers? Could we only eat body-builders? No, we need all of them.
C.3) TO VISIT URBAN GARDEN (only if they are available in the country)

NUMBER STUDENTS: 10-12 people.
APPROXIMATE DURATION: a whole morning or afternoon.
CONTENT:
The aim of this activity is to inform the students of the existence of urban gardens, since these orchards allow the production of seasonal fruits and vegetables that could supply one (or even more than one) family.
ACTIVITY STEP BY STEP:
The group is divided into pairs and each of them will have a task:
Interviews the gardeners, pictures of the garden, write down the food that is being produced in that moment, to list the work that is usually done in the garden, find out how much they produce each week, etc.
Taste the products (if we are allowed) or collect some in order to try it at home or in class.
Finally, they will talk about what they have learnt in the garden (they will discuss it in class).

D.1) THE ORIGIN OF FOOD

CONTENT:
All foods have animal (from the land or the sea), plant or mineral origin. This source largely determines the nutritional characteristics of the food. In this unit, we are trying to learn how to classify foods by origin, as well as to know the main nutritional characteristics according to their origin.
WORKSHOP STEP BY STEP:
Firstly, we will ask them to think of a food. Then they will write it clearly on a sheet and hold it so that everybody can see it.
Then, in every corner of the classroom, we will place a sheet (using the tape) on the wall saying:
• Land animals
• Marine animals
• Plants
• Minerals
Now we will explain them that these are the possible origin of all foods.
Now, each student should go to the corner where they think their food is from. If anyone stays behind, we will help him/her choose.
When everybody is standing in front of the posters, we will check if they are right. If anyone is wrong, we will take advantage of the opportunity to explain the mistake.
In addition, the teacher will have a list of foods for them to classify.
Food packaging and food cut-outs could also be used.
Probably, the doubts will be about foods like water or salt (from mineral origin), sugar (plant origin), or processed food like nuggets or pizza. All of these will be explained.
We will sit down again and we will write on the board the 4 food groups by origin and examples:
• Land animals: rabbit, chicken, pork ...
• Marine animals: hake, salmon ...
• Plants: tomato, orange ...
• Minerals: water and salt.
Finally, we will mention properties of each of these groups:
• Land animals: a lot of protein, less healthy fats, high in iron, calcium for bones...
• Marine animals: a lot of protein, healthier fats, iron, phosphorus for bones...
• Vegetables: fibber, vitamins...

• It is always better to drink (or “eat”) drinks that have no calories, especially water. This will help you avoid gaining weight.
• Collect (from several days) information about the amount of fluids that each person with Down syndrome drinks every day and check if they meet the requirements.
• You can use 2 methods:
o Method 1: adding the number of glasses. At the end of the day, there should be between 6 and 8 glasses.
o Method 2: adding the millilitres. At the end of the day, there should be 2000 ml (2 litters).

• When you exercise, go hiking or when it is very hot, your body loses water through sweat. It is important to replace this water by drinking extra fluids.

UNIDADE 1
Conhecer a origem dos alimentos na natureza e o que fornecem.
1) OBJECTIVO PRINCIPAL
Conhecer os grupos de alimentos que existem e a variedade dentro de cada um, analisando-os sob perspetivas diferentes. Vamos estudar a origem, tentar entender a sua forma e o que nos fornecem. Além disso, vamos evitar falar de nutrientes, sempre que for possível.
2) OS RESULTADOS DA APRENDIZAGEM:

Conhecer também as características nutricionais de cada grupo.

A ORIGEM DOS ALIMENTOS
A maior parte dos alimentos que comemos vem da NATUREZA.
Podemos obter alimentos de animais, vegetais, frutas ou das plantas que a terra nos fornece, bem como minerais.
Dependendo da sua origem, podemos classificá-los em:
• ORIGEM ANIMAL: porque são alimentos que vêm de animais (carne, peixe, ovos, leite...).
• ORIGEM VEGETAL: porque são obtidos a partir de plantas, vegetais e frutas que a terra nos fornece (frutas, verduras, legumes, cereais...).
• ORIGEM MINERAL: porque são obtidos a partir de água e sais minerais (sal e água).
Por isso, os alimentos são:

Outra forma comum de classificar os alimentos é por grupos de alimentos.
Na seção anterior, aprendemos que há uma grande variedade de alimentos provenientes de animais, vegetais (ou terra) e minerais.
Agora vamos aprender que esses alimentos podem ser classificados em 6 grupos, de acordo com as suas funções no corpo humano.
Para fazer isso, vamos utilizar uma roda, onde é muito importante observar as cores, porque os grupos de alimentos que são da mesma cor tem uma função semelhante.
A FUNÇÃO DE ALIMENTOS
Por fim, uma outra forma de classificar os alimentos, é pelas suas funções principais no corpo.
Nosso organismo utiliza, transforma e incorpora várias substâncias dos alimentos.
Podemos dividir os alimentos em 3 grupos de acordo com as funções que desempenham no nosso corpo. Eles são:
1) Os construtores, assim chamados porque são estes alimentos que nos fornecem o material necessário para a construção dos nossos músculos e tecidos, bem como material para renovar e repará-los. Eles são como os trabalhadores da construção do nosso corpo. Por exemplo: proteína, como peixe carne, ovos, leite, etc.
2) Os reguladores, são os que organizam tudo dentro de nós, isto é, o funcionamento do nosso complexo organismo. Eles são como os policias que regulam o trânsito. Frutas e legumes são alimentos de regulação do corpo.
3) Os energéticos, são os que nos fornecem mais energia (calorias) para o nosso organismo trabalhar. Eles são como a gasolina para um carro ou eletricidade para uma máquina. Por exemplo: alimentos ricos em amido, como pão, massas, batatas, gorduras, etc.
Na Roda dos Alimentos estão agrupados por cores em 3 partes diferentes (Página4).
Todos os alimentos são necessários.
É importante que aprendamos a comer de tudo (desde que seja saudável) e a comer apenas a quantidade necessária para o nosso corpo.
QUAIS SÃO OS ALIMENTAMOS QUE COMEMOS TODOS OS DIAS E OS QUE NÃO FAZEMOS.
Os alimentos menos saudáveis são:
MUITO DOCE MUITO GORDUROSOS MUITO SALGADA
Os alimentos que podemos comer todos os dias são os que aparecem na Roda dos Alimentos, porque nos proporcionam todas as substâncias necessárias para o nosso organismo funcionar.
Mas temos sempre que controlar a quantidade que ingerimos. Os alimentos que podemos comer todos os dias são:
• Arroz, massas, batatas ou pão.
• Legumes e nozes.
• Fruta fresca.
• Vegetais.
• Carne, peixe ou ovo.
• Leite, iogurte ou queijo.
• Óleo ou manteiga.
• Água, chá ou café.
Os alimentos que não se devem comer todos os dias e que não aparecem na Roda dos Alimentos, uma vez que não são necessários para o funcionamento do nosso corpo e podem até danificá-lo, são:
Sal consumido em excesso não é saudável, e pode dificultar o bom funcionamento do coração e dos rins.
Comer e beber açúcar a mais prejudica o nosso corpo e pode causar aumento de peso.
A gordura que comemos e não precisamos, permanece em circulação no sangue e dificulta a função do coração.
CAFÉ E ÁLCOL. DIARIAMENTE, ÀS VEZES OU NUNCA?
CAFÉ
• Não fornece ao nosso organismo substâncias importantes, e por isso não está na Roda dos Alimentos estudada.
• Tem uma função específica que é ajudar a manter ESTADO DE ALERTA e o cérebro mais ativo.
• Pode tomar um por dia, se o faz sentir bem.
• Não deve beber à noite porque pode prejudicar o sono e impedir o descanso do cérebro.
ÁLCOOL
• É uma substância energética, mas fornece-nos "más" calorias.
• Não é bom para a saúde

Hábitos como fumar e beber álcool, têm sido muito pouco estudados em pessoas com deficiência intelectual, embora tenha sido observado que o consumo é menos frequente do que na população geral. No entanto, o conselho é o mesmo para todos os adultos.
QUAIS SÃO OS ALIMENTOS LOCAIS E QUAIS SÃO OS SAZONAIS?
OS ALIMENTOS DA NOSSA TERRA são os típicos na área e na região em que vivemos. São também conhecidos como alimentos locais.
São os geralmente utilizados como o ingrediente principal em pratos locais e receitas.
ALIMENTOS SAZONAIS são cultivados e colhidos em diferentes estações: primavera, verão, outono ou inverno.
Quando comemos alimentos durante as estações correspondentes, são mais baratos e mais saborosos.
Além disso:
Se cultivarmos alimentos sazonais e comermos alimentos locais, estamos a cuidar do meio ambiente.
O ambiente é o espaço em que vivemos, isto é, solo, terra, ar, mar, rios, etc.

De forma a conhecer os alimentos, pode ser muito útil ter uma amostra de cada um na sala de aula. Portanto, alguns dias antes peça aos alunos para trazerem recipientes vazios de comida. No caso de alimentos frescos, vamos pedir-lhes para trazerem recortes de revistas ou imagens impressas a partir dos seus computadores.
Dependendo do número de alunos, iremos distribuir as imagens, recortes ou recipientes que devem ser trazidos por cada um deles.
Precisamos especialmente de:

• Biscoitos e doces

A dieta saudável também é a mais sustentável.
Tudo que envolva manipulação, processamento, embalagem ou transporte de alimentos prejudica as suas propriedades nutricionais, por isso, se tivermos a oportunidade de consumir produtos frescos, sazonais e locais, devem ser escolhidos como a opção mais saudável, não só para os seres humanos, mas também para o planeta, ou seja, o ambiente.
WORKSHOP (OFICINA) PASSO A PASSO
Um aspeto muito importante de uma dieta sustentável são os alimentos sazonais.
Não são só as frutas e legumes que são sazonais; peixes e mariscos também têm os seus meses "preferidos".
Nós podemos projetar o calendário sazonal ou escrevê-lo no quadro. Nos Anexos nós incluímos os espanhóis, mas cada país deve ter o seu próprio.
Vamos dividir os alunos em quatro grupos, um para cada estação, para colocar os alimentos na estação correspondente a eles.

CONTEÚDO
Os alimentos são agrupados em 6 grupos (tais como a Roda de alimentos) mais água:
• vegetais
• fruta
• amido
• gorduras
• proteína
• leite
• água
SUPERMERCADO
Vamos rever os grupos de alimentos, ao mesmo tempo que fazemos cartazes (com o papel e os marcadores), com os nomes dos grupos de alimentos.
Vamos dividir as mesas na sala de aula em 6 grupos e vamos deixar um cartaz em cada grupo, mais algum espaço para a água.
Selecionar metade dos alunos da turma e pedir-lhes para tirar toda a comida das caixas e organizá-los nos cartazes, como um supermercado.
A principal dificuldade será provavelmente, a de colocar os alimentos mistos nos cartazes, como sumos enlatados (são frutos? Ou bebidas? Será que eles vão com a água?) Ou pratos pré-cozidos (pizza de vegetais, metade pão, a outra metade vegetais), etc.
Vamos deixar todos estes alimentos duvidosos de lado, para falar sobre eles no final.
Eles vão perceber também que existem alimentos que são naturais, mas que não estão na roda dos alimentos, porque eles não nos fornecem nutrientes próprios, mas se consumidos têm funções no nosso corpo, tais como café, chá, sal, etc.
Além disso, vão encontrar alimentos cujo consumo não é recomendado, tais como álcool ou doces e vamos deixá-los de lado também para o final.
Vamos pedir aos alunos para fazerem uma apresentação do seu supermercado, explicando em que cartazes colocam os alimentos e por quê. É um bom momento para explicar-lhes uma ideia sobre os grupos de alimentos, que provavelmente, os comemos todos os dias, mas não nas mesmas quantidades. Por exemplo, podemos beber dois copos de leite por dia, mas quando se trata de gordura, tentamos usar apenas uma colher de chá.
Os alimentos mistos que deixamos de lado são produzidos em fábricas e, geralmente, menos saudáveis, porque são menos naturais e têm mais açúcar, mais sal e mais gordura do que quando são preparados por nós.
É agora que o primeiro grupo de estudantes se senta e começa a trabalhar com o segundo grupo.
Primeiro vamos pedir-lhes para rever os cartazes do "supermercado" e corrigir o que eles acham não estão bem agrupados. Em seguida, eles vão explicar as suas decisões sobre isso (se mudaram alimentos dos cartazes ou não).
Em seguida, pedir para, dentro de cada grupo de alimentos, também separarem os tipos de alimentos, ou seja:
• Nas proteínas, devem separar a carne, peixe, ovos, frutos do mar, nozes e vegetais.
• Nos produtos lácteos, devem separar iogurte, leite e queijo.
• Nas gorduras, devem separar óleos, manteiga e margarina.
• Nos alimentos ricos em amido, devem separar massas, pão, arroz e cereais.
• Nas frutas e legumes não precisam de separar nada.
• Mais uma vez, vão perceber que existem alimentos muito diferentes, como carne e peixe, mas, ao mesmo tempo, ambos são iguais, porque são alimentos com proteína.
Ao explicar os lacticínios, pode ser mencionado que os iogurtes e os queijos são provenientes de leite. Neste processo, o leite perde a água e ganha gordura (mais no iogurte do que no queijo).
Por fim, tiramos a comida do "supermercado" e todo mundo se senta para discutir as conclusões. Eles devem fazer as reflexões finais ou conclusões, vamos ajudá-los com as perguntas abaixo.
CONCLUSÕES
• Quais os alimentos do supermercado não são necessários para uma dieta saudável? (alimentos supérfluos: doces aperitivos, bolos, biscoitos, refrigerantes...). Eles devem ser capazes de os identificar.
• Qual é a diferença entre o supermercado e mercado? (Fabricado e Natural. Com e sem embalagem. Com aditivos e sem aditivos. Etc.)

DURAÇÃO APROXIMADA: uma manhã ou tarde, inteira.
ATIVIDADE PASSO A PASSO:
• Identificar os grupos de alimentos disponíveis no mercado (carnes, peixes, frutas e legumes...) e anotá-los.
• Salientar os que se costumam comprar embalados e quais devemos normalmente comprar frescos ou os que comprar a granel.
• Identificar a variedade de alimentos dentro de cada grupo, que estão disponíveis, por exemplo:
o Grupo: Carne
o Variedades: carne de porco, galinha, coelho, vitela, etc.
• Questione os comerciantes sobre a origem dos seus produtos e como os podemos obter:
o Onde os podemos comprar
o Como é que são transportados
o Como é que eles limpam e preparam.
o Quanto é que vendem
• Podem fazer anotações ou até mesmo tirar fotos, uma vez que eles precisam recolher todas essas informações para manter por mais um dia na aula, onde podem explicar o que viram, desenvolvendo cada um dos 4 pontos acima.
C.2) VISITAR UM SUPERMERCADO

• Um amarelo que diz " energéticos".
• Outro vermelho que diz "construtores ".

ATIVIDADE PASSO A PASSO:
Identificar os grupos de alimentos que estão disponíveis em cada prateleira do supermercado.
Vamos concentrar nos na prateleira de alimentos que queremos promover, e não em todos (não vamos prestar atenção à prateleira que tem alimentos não-recomendados).
Agora vão dar uma volta em todo o supermercado, para indicar, a principal função dos alimentos, dependendo se a prateleira deve ter um cartaz em vermelho, amarelo ou verde.
CONCLUSÕES:
• Poderíamos só comer alimentos que regulam o nosso organismo? Poderíamos só comer alimentos energéticos? Poderíamos só comer alimentos construtores do corpo? Não, precisamos de todos eles.
C. 3) VISITAR UMA HORTA URBANA (só se existirem no país)
MATERIAL: Bloco de notas e esferográfica (cada aluno).
NÚMERO DE ESTUDANTES: 10-12 pessoas
DURAÇÃO APROXIMADA: uma manhã ou tarde, inteira.
CONTEÚDO:
O objetivo desta atividade é o de informar os alunos da existência de hortas urbanas, desde que estas permitam a produção de legumes e frutas sazonais que poderiam fornecer uma família (ou até mais).
PASSO A PASSO DE ATIVIDADE:
O grupo é dividido em pares e cada um terá uma tarefa:
Entrevistar os jardineiros, tirar fotografias do jardim, anotar o alimento que está a ser produzido naquele momento, para listar o trabalho que normalmente é feito no jardim, descobrir quanto eles produzem a cada semana, etc.
Provar os produtos (se for permitido) ou levar alguns, para os experimentar em casa ou na sala de aula. Por fim, falar sobre o que aprenderam no jardim (eles irão discutir o assunto na sala de aula).

CONTEÚDO:
Os alimentos têm todos origem mineral ou animal (da terra ou do mar) e vegetal. Esta fonte determina, em grande parte, as características nutricionais dos alimentos. Nesta unidade, vamos tentar aprender a classificar os alimentos pela origem, bem como conhecer as principais características nutricionais de acordo com a sua origem.
(WORKSHOP) OFICINA PASSO A PASSO:
Em primeiro lugar, pedimos que eles pensem em um alimento. Em seguida, vão escrever numa folha e segurá-la para que todos vejam.
Então, em cada canto da sala de aula vamos colocar uma folha na parede (utilizando a fita cola), dizendo:
• Os animais
• Animais marinhos
• Plantas
• Minerais
Agora vamos explicar-lhes que estas são a origem possível de todos os alimentos.
Agora, cada aluno deve ir para o canto onde pensa que está a sua comida. Se alguém ficar para trás, vamos ajudar a escolher.
Quando todo mundo estiver de pé na frente dos cartazes, vamos verificar se estão certos. Se alguém estiver errado, vamos aproveitar a oportunidade para explicar o erro.
Além disso, o professor terá uma lista de alimentos para classificar.
Embalagens de alimentos e recortes também poderão ser usados.
Provavelmente, as dúvidas serão sobre alimentos como água ou sal (de origem mineral), açúcar (origem vegetal), ou alimentos processados, como nuggets ou pizza. Tudo isso será explicado.
Vamos sentar de novo e escrever no quadro os 4 grupos de alimentos, por origem e exemplos:

Cada grupo irá girar (à vez) a seta da roleta e de acordo com o grupo de alimentos que a seta está apontar, eles vão ter que dar um exemplo de alimentos que pertence a esse grupo. Eles terão 30 segundos para pensar.

• Sempre é melhor beber ou ("comer") bebidas sem calorias, especialmente água. Isto ajudará a evitar ganhar peso.
• Recolha informação, em vários dias, sobre a quantidade de líquidos que as pessoa com síndrome de Dawn ingerem e verifique se está de acordo com as recomendações.
Podem usar-se 2 métodos:
o Método 1: juntar o número de copos. No fim do dia, deve estar entre os 6 e 8 copos.
o Método 2: juntar os mililitros. No final do dia, deve ser de 2000 ml (2 litros).
A correspondência de um copo com o ml é o seguinte:
Lembre-se que se um café é ¼ de um copo e um chá é ¾ de um copo, os dois juntos vão fazer apenas 1 copo de bebida.

Quando se faz exercício, se fazem caminhadas ou quando está muito calor, o corpo perde água através do suor. É importante substituir essa água pela ingestão extra de líquidos.
Uma maneira de calcular o líquido que precisa para se recuperar dessa perda, é pesar-se antes e depois do exercício. Se o peso desce meio quilo, deve beber 500 ml de líquido ou 2 copos. Na próxima vez que fizer exercício, pode beber esses 2 copos extras antes, durante ou após o exercício.
