In the same sub-contract tender document again!
"Si les fentes sont remplies, il faut utiliser du mortier de ciment et couvrir d'au moins 2 cm"
It's talking about the 'slots' or 'grooves' cut ['chased'] into concrete or masonry walls to accommodate pipes (etc.) that will subsequently be covered over and hidden. Anyone know the correct jargon term for this?

You said it yourself (works as a noun and verb).

But beware! Not all your fentes may be chased. Some may be boxed out (bricked out? - if say a half brick only is placed, to leave room for a built-in pipe run). In this case, a general term such as slots (or even pipe/cable runs) may be preferable.
All part of the ongoing fun!

Comment: "Thanks, helpful explanation as usual!"

gaps could do or fissures or cracks
slots is a bit slot machine and it depends on whether these "fentes" were deliberately made for some purpose or other or not
