In American English, at least, I think this sounds a bit better, but both of the options above would be clear as well.

: shredded coconut and flaked coconut are not the same: shredded coconut is very thin strands of coconut (almost grated, if you like) whereas flakes are fine pieces

this is true...but generally "scaglie" is used for something closer to grated I think (scaglie di grano, for example)
