Not being a wine or grappa expert, I'm uncertain of the phrasing I should use.

It means the grappa is aged in stainless steel vats with a period (passaggio) of conditioning in wooden, probably oak, casks.

The wine is an excellent Friulian metodo classico and I picked the 500-gram mushroom in Carnia (yes, I do have a mushroom licence). And the name's Giles ;-)
