English term or phrase: tofu-eating mediators
Sure, the tofu-eating mediators contacted me with all sorts of offers about talking to the dead and traveling to higher planes of consciousness. But they were not my type. Then in early 1976 I was contacted by a couple in San Diego, Jay and Martha B., who promised to introduce me to spiritual entities. “You’ll be able to talk to them,” the B.s promised. “You can talk to them and they’ll answer.”

Explanation:
yes, as Jack says, they are vegetarian but the "tofu" bit implies they are liberal, New Wave, free-thinking, whale-saving etc etc as well

Often a put-down of people not seen as being in the "real world" as here where it follows with "NOT MY TYPE"

vegetarian mediators

Explanation:
Tofu is a vegetarian substitute for meat. "Tofu-eating" is a scornful way of referring to the mediators, who are trendy people with belief in spiritualism, herbalist remedies, etc.
