I have seen "smoke/fume evacuators" in google, but I wonder if something simpler like "smoke clearance system" may be more appropriate.

Evacuatore di fumo e di calore is often translated as smoke and heat exhaust ventilator/system

I checked IATE, which translates evacuatore di fumo as smoke clearance vent, which is pretty similar to what you suggest above.

bravo phil! smoke ventilation system sounds complete. when i checked online, loads of companies popped up under this terminology offering what seems to be a similar service to the one in question. for example:
