One of the ingredients in a recipe for 'avocadosalade met kalfsbonbons'. To prepare the latter: 'neem een schepje levermousse en rol hier een plakje kalfstong en vervolgens een plakje gerookte gepekelde kalfslende omheen.' Food Lexicon hives 'sirloin of veal' for 'kalfslende' but no hits for 'smoked, pickled sirloin of veal' or permutations. Any ideas? Need to deliver very soon!!

It seems that in combination with 'smoked', 'salted' is more commonly used than 'pickled'. So I would go for 'smoked and salted sirloin of veal'.

Typically, smoked and salted meats were boiled, whereas fresh meats were roasted to some degree rather than boiled (Bausman and Munroe 1946).
