Azioni / shares: these are equal units where all shares in a company will have the same value. The ownership of a company will be divided into a fixed number of shares (azioni) each with the same value. You can look up the price of the shares of "società per azioni" on the Milan stock exchange.
Quote / quotas: these don't really have an equivalent today in English. In the distant past you could by a percentage of the stock of a company, but not today, only in a partnership. However in an Italian srl (limited liability company) you can only own a percentage of the stock and that percentaged is referred to as "quote", strangely in the plural. It is standard practice to translate this as "quotas", but there is no real equivalent in English to refer to.
The Italian "partecipazione" just means ownership in the company which of course allows the owner to share or "participate" in the profits.
